Lemon Pizza with Fresh Herbs

Ingredients
  

Pizza Base
  • 1 pound pizza dough store-bought or homemade
  • 1 tbsp olive oil for brushing dough
  • 0.5 tsp garlic powder optional
  • Pinch of salt
Toppings
  • 8 oz fresh mozzarella cheese drained, torn/sliced
  • 0.25 cup Parmesan cheese freshly grated
  • 1 tbsp fresh lemon zest
  • 2 tbsp fresh lemon juice
  • 3 tbsp extra virgin olive oil
  • 0.25 tsp red pepper flakes optional
  • 0.25 cup fresh parsley chopped (or chives)
  • Freshly ground black pepper to taste

Equipment

  • Pizza stone or baking sheet
  • Pizza peel (optional)
  • Mixing bowls

Method
 

  1. Preheat oven to 450°F (230°C) with pizza stone/baking sheet. Stretch dough. Transfer to parchment/oiled peel.
  2. Whisk 1 tbsp olive oil, garlic powder (opt.), and pinch of salt. Brush over crust edges.
  3. Scatter fresh mozzarella, then Parmesan cheese over dough, leaving border.
  4. Bake 10-15 minutes until crust is golden and mozzarella is melted, bubbly, and thick gooey.
  5. While pizza bakes, whisk 3 tbsp olive oil, lemon juice, lemon zest, and red pepper flakes (opt.).
  6. Remove pizza. Immediately drizzle lemon-infused oil. Sprinkle with fresh parsley and black pepper. Slice and serve hot.

Notes

For best results, use fresh pizza dough and a very hot oven with a pizza stone. Don't overload toppings. Can add ricotta for extra creaminess.
