Lipton Onion Potatoes in Slow Cooker

Ingredients
  

Main Ingredients
  • 2.5 lbs potatoes Yukon Gold or Red, sliced into rounds
  • 1 packet Lipton Onion Soup Mix (1 oz packet)
  • 0.33 cup olive oil or vegetable oil
  • 0.25 cup butter melted
  • 2 cloves garlic minced (optional)
  • 1 tbsp fresh thyme for garnish
  • 1 pinch black pepper to taste

Method
 

  1. Wash potatoes thoroughly. Slice into uniform 1/4 to 1/2 inch thick rounds. (Peeling is optional).
  2. In a small bowl, whisk together the olive oil and melted butter.
  3. Place sliced potatoes in a large bowl. Drizzle with the oil/butter mixture and sprinkle the Lipton Onion Soup Mix packet over the top.
  4. Toss well until potatoes are evenly coated in the seasoning.
  5. Lightly grease the slow cooker insert. Add the potatoes.
  6. Cover and cook on HIGH for 3-4 hours or LOW for 6-7 hours, stirring once halfway through if possible.
  7. Check tenderness with a fork. Once soft, garnish with fresh thyme and serve warm.

Notes

For crispy edges, transfer cooked potatoes to a baking sheet and broil for 3 minutes before serving.
