Crispy french fries topped with homemade popcorn chicken, tossed in spicy buffalo sauce and drizzled with cooling ranch dressing.

Ingredients
  

Fries Base
  • 1 lb frozen french fries or homemade russet fries
  • 1 tsp seasoning salt
Popcorn Chicken
  • 1 lb chicken breast cut into 1-inch cubes
  • 1 cup buttermilk
  • 1.5 cups all-purpose flour
  • 0.25 cup cornstarch
  • 1 tbsp garlic powder
  • 1 tbsp paprika
Toppings
  • 0.5 cup hot sauce Frank's Red Hot preferred
  • 4 tbsp unsalted butter melted
  • 0.3 cup ranch dressing
  • 2 stalks green onions chopped

Equipment

  • Deep Fryer or Large Pot
  • Mixing bowls
  • Wire rack
  • Whisk

Method
 

  1. Preheat oil in a deep fryer or large heavy pot to 350°F (175°C).
  2. Place cubed chicken in a bowl and cover with buttermilk. Let sit for 15 minutes.
  3. In a separate bowl, whisk together flour, cornstarch, garlic powder, paprika, salt, and pepper.
  4. Dredge chicken pieces in the flour mixture, pressing to adhere. Shake off excess.
  5. Fry the french fries according to package directions or until golden brown. Drain on a wire rack and season with salt.
  6. Fry the chicken pieces in batches for 4-5 minutes until golden and cooked through. Drain.
  7. In a small bowl, whisk melted butter and hot sauce until combined.
  8. Toss the fried chicken in half of the buffalo sauce mixture.
  9. Assemble by placing fries on a platter, topping with chicken, drizzling with remaining buffalo sauce and ranch, and garnishing with green onions.

Notes

For extra cheesy fries, melt shredded cheddar or mozzarella over the fries before adding the chicken.
