Ingredients
  

Base & Protein
  • 1 cup hash browns or diced potatoes frozen or fresh
  • 2 large eggs fried or scrambled
  • 2 slices bacon cooked crispy and chopped
  • 2 tbsp shredded cheddar cheese optional
Toppings
  • 0.5 avocado sliced
  • 0.25 cup tomatoes diced (or pico de gallo)
  • 1 tbsp green onions chopped
  • 1 tbsp Greek yogurt plain (sour cream substitute)

  • Air Fryer (Optional for potatoes)

Method
 

  1. Cook your potatoes (hash browns or cubes) in an air fryer at 375°F for 10-12 minutes or pan-fry until crispy and golden.
  2. Meanwhile, cook the bacon in a skillet until crispy. Remove, drain on paper towels, and chop.
  3. In the same skillet (remove excess grease if needed), cook your eggs to your preference: sunny-side-up or scrambled.
  4. Prepare the bowl: Place the hot crispy potatoes at the bottom. Sprinkle cheese over them immediately so it melts.
  5. Top with the cooked eggs, chopped bacon, avocado slices, and diced tomatoes.
  6. Finish with a dollop of Greek yogurt and a sprinkle of green onions. Season with salt and pepper to taste.

Notes

Use turkey bacon and egg whites to lower fat content while keeping protein high.
