- Slice the 4 medium bananas in half crosswise, then slice each half lengthwise (16 pieces total). Insert a popsicle stick into each piece if desired. Place on a parchment-lined baking sheet and freeze for at least 30 minutes to firm up.
- Make the "Caramel": Combine peanut butter, maple syrup/sweetener, melted coconut oil, vanilla extract, and sea salt. Stir until smooth and creamy.
- Coat each partially frozen banana piece evenly with the peanut butter "caramel" mixture. Return to the freezer for 1-2 hours until the caramel layer is completely solid.
- Melt the Chocolate: Combine dark chocolate chips and 1 tsp coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring until smooth and fully melted.
- Dip and Top: Quickly dip each solid-frozen, caramel-coated banana into the melted chocolate. Allow excess to drip off.
- Immediately roll the chocolate-coated banana in the chopped peanuts, pressing gently. Place back on the parchment-lined sheet.
- Final Freeze: Return the finished treats to the freezer for a final 15 minutes to fully set the chocolate. Store in an airtight container in the freezer.
Notes
For best texture, allow the treats to thaw for 5-10 minutes before eating. Use a high-quality dark chocolate (70%+) for better flavor and less sugar.
