Mac and Cheese Meatloaf

Ingredients
  

Pasta Base
  • 1.5 cups elbow macaroni uncooked (measure before boiling)
Meat Mixture
  • 1.5 lbs ground beef 85/15 lean
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 2 large eggs beaten
  • 1 tbsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper
Cheese
  • 2 cups cheddar cheese shredded, divided
  • 1 cup mozzarella cheese shredded, divided
  • 0.25 cup milk

  • 9x9 Baking Dish or Loaf Pan
  • Large pot
  • Mixing bowl
  • Cheese Grater

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9x9 baking dish or large loaf pan.
  2. Boil the macaroni in salted water for 2 minutes less than package directions (very al dente). Drain and rinse with cool water.
  3. In a large bowl, combine ground beef, onion, garlic, eggs, Worcestershire sauce, milk, Italian seasoning, salt, and pepper. Mix gently.
  4. Add the cooked macaroni, 1.5 cups of cheddar, and 0.5 cups of mozzarella to the meat mixture. Fold until evenly combined.
  5. Press the mixture firmly into the prepared baking dish.
  6. Bake for 35-40 minutes until the beef is cooked through.
  7. Remove from oven and top with the remaining cheddar and mozzarella cheese.
  8. Bake for another 10-15 minutes until the cheese is melted and bubbly golden brown.
  9. Let rest for 15 minutes before slicing to allow the loaf to set.

Notes

You can use ground turkey or chicken for a lighter version, but add a little extra olive oil to keep it moist.
