- In a large skillet, cook bacon over medium heat until crispy. Remove bacon with a slotted spoon to a paper towel, leaving rendered fat in the pan.
- Increase heat to medium-high. Add diced sweet potatoes (add oil if needed). Season with salt, pepper, and optional spices (cinnamon/paprika).
- Cook potatoes for 10-15 minutes, stirring only every 3-4 minutes, until tender and caramelized on the outside.
- Reduce heat to medium-low. Return crispy bacon to the skillet. Pour maple syrup over the hash.
- Stir constantly for 1-2 minutes until the maple syrup reduces, mingling with the fat to form a thick, glossy, gooey, viscous glaze coating all pieces. Remove from heat immediately.
- Serve immediately, garnished with fresh parsley or chopped scallions.
Notes
Ensure the sweet potato cubes are uniform for even cooking. Do not crowd the pan, or the potatoes will steam instead of searing. The final glaze step is quick, so watch carefully to prevent burning the maple syrup.
