- In a large bowl, combine the finely crushed vanilla wafers, ground nuts, sifted powdered sugar, and a pinch of salt.
- In a separate small bowl, whisk together the tequila, orange liqueur, fresh lime juice, lime zest, and corn syrup until smooth.
- Pour the wet ingredients over the dry mixture. Mix and knead with your hands until a cohesive dough forms. If it's too dry, add a splash of tequila; if too wet, add more powdered sugar.
- Cover the bowl with plastic wrap and chill in the refrigerator for at least 30 minutes to firm up.
- Once chilled, scoop 1-tablespoon portions of the dough and roll them into smooth balls between your palms.
- Roll each ball generously in the coarse sugar (mixed with a little extra lime zest if desired) until fully coated.
- Place the coated balls on a parchment-lined baking sheet and refrigerate in an airtight container for at least 24 hours before serving to let the flavors meld.
Notes
Store in the refrigerator for up to 2 weeks or freeze for up to 3 months. Do not serve to children, as the alcohol is not cooked out.
