Ingredients
  

Marinated Feta
  • 8 oz feta cheese block cut into 16 cubes
  • 0.33 cup extra virgin olive oil
  • 1 tsp dried oregano
  • 0.5 tsp dried thyme
  • 0.25 tsp red pepper flakes optional
  • 1 tsp lemon zest
Assembly
  • 1 large English cucumber sliced into thick rounds
  • 16 Kalamata olives pitted
  • 1 bunch fresh parsley for garnish

  • Toothpicks or small skewers
  • Cutting board
  • Mixing bowl

Method
 

  1. Pat the block of feta dry and cut into uniform cubes (approx. 1 inch).
  2. In a small bowl, whisk together olive oil, oregano, thyme, red pepper flakes, and lemon zest.
  3. Gently toss feta cubes in the herbed oil and let marinate for 15-30 minutes.
  4. Wash and slice the cucumber into thick rounds (at least 1/2 inch thick). Pat dry with paper towels.
  5. To assemble: Thread a pitted olive onto a toothpick, followed by a marinated feta cube.
  6. Press the toothpick into the center of a cucumber slice to form the base.
  7. Arrange on a platter and drizzle with a little remaining marinade. Garnish each olive with a tiny sprig of parsley.

Notes

Use English cucumbers for the best crunch and fewer seeds.
