Ingredients
  

Salmon
  • 4 fillets salmon 6 oz each, skinless or skin-on
  • 1 tbsp olive oil
  • pinch salt and pepper to taste
Creamy Sun-Dried Tomato Sauce
  • 2 tbsp unsalted butter
  • 4 cloves garlic minced
  • 0.5 cup sun-dried tomatoes oil-packed, drained and chopped
  • 0.5 cup chicken broth or dry white wine
  • 0.75 cup heavy whipping cream
  • 0.5 cup Parmesan cheese freshly grated
  • 0.25 cup fresh basil or parsley chopped, for garnish
  • 0.5 tsp red pepper flakes optional

Method
 

  1. Pat salmon dry and season generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
  2. Sear the salmon for 4-5 minutes per side until a golden crust forms and fish is cooked through. Remove to a plate.
  3. Reduce heat to medium. Add butter to the skillet. Once melted, sauté minced garlic and chopped sun-dried tomatoes for 1-2 minutes until fragrant.
  4. Pour in the broth or wine to deglaze the pan, scraping up browned bits. Simmer for 2 minutes to reduce slightly.
  5. Reduce heat to low. Stir in heavy cream and bring to a gentle simmer. Gradually whisk in Parmesan cheese until melted and the sauce thickens.
  6. Return the salmon to the skillet, spooning the cream sauce over the top. Simmer for 1-2 minutes to warm through.
  7. Garnish with fresh herbs and serve immediately.

Notes

Ensure salmon is at room temperature before searing for even cooking. Serve with pasta, rice, or crusty bread to soak up the sauce.
