Ingredients
  

Spiced Beef
  • 1 lb lean ground beef
  • 1 tbsp olive oil
  • 0.5 small yellow onion diced
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 0.25 tsp ground cinnamon
  • 1 tbsp tomato paste
  • salt and black pepper to taste
Assembly
  • 4 whole pita breads pocket style, halved
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 0.5 cup feta cheese crumbled
  • 0.33 cup Kalamata olives sliced
  • 0.5 cup tzatziki sauce

Method
 

  1. Heat olive oil in a large skillet. Sauté onion until soft, then add ground beef and cook until browned. Drain excess fat.
  2. Add garlic, oregano, cumin, cinnamon, tomato paste, salt, and pepper to the beef. Cook for 2 minutes until fragrant.
  3. While beef cooks, chop cucumbers, tomatoes, and olives.
  4. Warm the pita halves slightly to make them pliable, then gently open the pockets.
  5. Layer the pockets: Spread a little tzatziki inside, add warm beef, top with veggies, olives, and feta. Finish with more tzatziki.
  6. Serve immediately.

Notes

Warming the pita bread before stuffing is crucial to prevent tearing. You can swap beef for ground lamb or turkey.
