Mediterranean Quesadilla with Spinach & Feta

Ingredients
  

Quesadilla Base
  • 4 large flour tortillas 8 or 10 inch
  • 1 tbsp olive oil or butter, for frying
Filling
  • 1.5 cups mozzarella cheese shredded
  • 0.5 cup feta cheese crumbled
  • 2 cups fresh spinach chopped roughly
  • 0.5 cup red onion finely diced or sliced
  • 0.5 cup tomatoes diced and seeded
  • 0.5 tsp dried oregano optional

Equipment

  • Large skillet or griddle
  • Spatula
  • Pizza cutter or knife
  • Cutting board

Method
 

  1. Wash spinach and chop roughly. Dice tomatoes and red onion. Pat tomatoes dry to remove excess moisture.
  2. Heat a large skillet over medium heat. Brush one side of a tortilla with olive oil.
  3. Place tortilla oil-side down in the hot skillet.
  4. Sprinkle a layer of mozzarella cheese over the tortilla.
  5. Evenly distribute spinach, feta, tomatoes, and red onion over the mozzarella.
  6. Top with a little more mozzarella (to help the top stick) and sprinkle with oregano.
  7. Place the second tortilla on top and brush the top with oil.
  8. Cook for 3-4 minutes until the bottom is golden brown and crispy.
  9. Carefully flip the quesadilla and cook for another 2-3 minutes until cheese is melted.
  10. Remove from pan, let rest for 1 minute, slice into wedges and serve.

Notes

Serve with tzatziki or marinara sauce for dipping.
