Ingredients
  

The Base
  • 4 rounds pita bread or flour tortillas
  • 0.25 cup olive oil for brushing
The Topping
  • 10 oz frozen spinach thawed and squeezed very dry
  • 1 cup feta cheese crumbled
  • 1 cup mozzarella cheese shredded
  • 2 cloves garlic minced
  • 1 tbsp fresh dill chopped
  • 1 tsp lemon zest
  • 1 pinch red pepper flakes

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Thaw spinach and squeeze out all excess liquid using a clean towel. It must be dry.
  3. In a bowl, mix spinach, feta, mozzarella, garlic, dill, lemon zest, and pepper flakes.
  4. Cut pita bread into triangles. Brush both sides with olive oil.
  5. Arrange pita triangles on a baking sheet in a single layer.
  6. Spread a spoonful of the spinach mixture onto each triangle.
  7. Bake for 10-12 minutes until the edges are golden brown and cheese is bubbly.
  8. Let cool on the pan for 5 minutes to crisp up before serving.

Notes

Ensure the spinach is squeezed very dry, otherwise the crisps will be soggy. You can also use tortillas for a thinner, crispier base.
