Ingredients
  

Steak & Marinade
  • 1.5 lbs sirloin or flank steak
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 4 cloves garlic minced
  • 2 tsp dried oregano
Bowl Base & Toppings
  • 2 cups cooked quinoa or rice
  • 2 cups cherry tomatoes halved
  • 1 English cucumber diced
  • 0.5 cup feta cheese crumbled
  • 0.33 cup Kalamata olives pitted
Herb Sauce
  • 1 cup fresh parsley
  • 0.33 cup olive oil
  • 2 tbsp red wine vinegar

Equipment

  • Cast Iron Skillet or Grill
  • Cutting board
  • Chef's knife
  • Food processor

Method
 

  1. Whisk olive oil, lemon juice, garlic, and oregano. Marinate steak for 20 mins.
  2. Prepare grains and chop vegetables while steak marinates.
  3. Blend parsley, vinegar, garlic, and olive oil to make the green sauce.
  4. Sear steak in a hot skillet for 4-5 mins per side (medium-rare). Rest for 10 mins.
  5. Slice steak against the grain.
  6. Assemble bowls with grains, steak, veggies, and cheese. Drizzle with sauce.

Notes

Store dressing separately to keep veggies crisp.
