Ingredients

Cheese Base
  • 10 oz goat cheese log chèvre
Toppings
  • 6 slices bacon cooked crispy and crumbled
  • 0.5 cup pecans chopped and toasted
  • 0.25 cup dried cranberries roughly chopped
  • 1 tbsp fresh rosemary minced
Glaze
  • 0.33 cup honey or maple syrup
  • 0.5 tsp black pepper freshly cracked
  • 1 pinch red pepper flakes optional

Equipment

  • Skillet
  • Knife
  • Cutting board
  • Serving platter

Method

  1. Cook bacon in a skillet until extra crispy. Drain on paper towels, let cool, and crumble into small bits.
  2. In a dry pan over medium heat, toast the chopped pecans for 3-5 minutes until fragrant. Watch carefully to avoid burning.
  3. In a small bowl, mix the crumbled bacon, toasted pecans, cranberries, and half of the minced rosemary.
  4. Place the goat cheese log on a serving platter. If desired, let it sit for 10 minutes to soften slightly.
  5. Press the bacon and nut mixture generously onto the top and sides of the goat cheese log.
  6. Drizzle the honey over the entire log, allowing it to pool on the plate.
  7. Garnish with the remaining rosemary and cracked black pepper.
  8. Serve immediately with crackers or toasted baguette slices.

Notes

For easier spreading, let the assembled log sit at room temperature for 15-20 minutes before serving.
