Ingredients

Chocolate Base
  • 1 batch chocolate cake or brownie 9x13 inch pan, cooled, cut into pieces OR 24-30 chocolate ladyfingers
  • 1.5 cups strong brewed coffee or espresso cooled
Mascarpone Cream
  • 16 oz mascarpone cheese chilled (2 tubs)
  • 1.5 cups heavy cream chilled
  • 0.5 cup powdered sugar sifted
  • 1 tsp vanilla extract
Caramel Layer
  • 1 jar high-quality caramel sauce 12 oz, store-bought or homemade
  • Pinch of flaky sea salt optional, for salted caramel
Finishing
  • 0.25 cup unsweetened cocoa powder for dusting

Equipment

  • 9x13 inch baking dish
  • Electric mixer
  • Large mixing bowls
  • Fine-mesh sieve

Method

  1. Beat chilled mascarpone, heavy cream, sifted powdered sugar, and vanilla until thick and fluffy. Do not overmix (forms thick gooey mascarpone cream).
  2. Gently warm caramel sauce until pourable (thick gooey consistency). Stir in flaky sea salt if desired.
  3. Arrange half of the chocolate cake/brownie pieces (or ladyfingers) in a 9x13 dish. Drizzle with half of the cooled coffee/espresso.
  4. Spread half of the mascarpone cream over the chocolate base.
  5. Drizzle half of the warmed caramel sauce over the mascarpone cream.
  6. Repeat layers with remaining chocolate base, coffee, mascarpone cream, and caramel sauce.
  7. Cover tightly and refrigerate for at least 6 hours, or preferably overnight, for layers to set and flavors to meld.
  8. Just before serving, generously dust the top with unsweetened cocoa powder using a fine-mesh sieve. Slice and serve.

Notes

Use high-quality ingredients for best results. Chilling is essential for setting the layers and melding flavors. Dust with cocoa just before serving.
