Method
- Cook the tater tots according to package directions until they are golden brown and very crispy. Let cool slightly.
- While tots are cooking, prepare toppings: slice onion into small pieces and cut each cheese slice into 4 small squares.
- Divide ground beef into 16-20 small portions and form into mini patties slightly larger than a tater tot. Season with salt and pepper.
- Heat a skillet over medium-high heat with a little oil. Cook patties for 1-2 minutes on one side.
- Flip patties, top each with a cheese square, and cook for another minute until cooked through and cheese is melted.
- To assemble, place a tater tot on a plate. Top with onion, pickle, a cheesy burger patty, and a second tater tot.
- Secure with a toothpick if desired and serve immediately.
Notes
For best results, make sure the tater tots are extra crispy so they hold up as 'buns'. You can also add tiny dollops of ketchup or mustard.
