Ingredients
  

For the Protein Dough
  • 1 1/2 cups Oat flour Or blended rolled oats
  • 1/2 cup Vanilla protein powder Whey or plant-based
  • 1/2 cup Cashew or almond butter Creamy and natural
  • 1/3 cup Maple syrup or honey
  • 2 tablespoons Almond milk Or as needed for consistency
  • 1/2 teaspoon Peppermint extract
  • 1/4 teaspoon Sea salt
For the Mint Coating
  • 1 cup White chocolate chips High quality
  • 1 tablespoon Coconut oil
  • 1/4 teaspoon Peppermint extract Must be oil-based
  • 1/4 teaspoon Spirulina or matcha powder For green coloring
  • 1/3 cup Mini dark chocolate chips For outside coating
  • 2 tablespoons Dark chocolate shavings Optional, for texture

Method
 

  1. In a large bowl, whisk together the oat flour, vanilla protein powder, and sea salt.
  2. Add the creamy nut butter, maple syrup, and peppermint extract. Mix until a dough forms. Add almond milk 1 tablespoon at a time if the mixture is too dry to hold together.
  3. Roll the dough into 15 bite-sized balls and place on a parchment-lined baking sheet. Freeze for 15-20 minutes.
  4. Melt the white chocolate chips and coconut oil in the microwave in 30-second increments, stirring until smooth. Avoid overheating.
  5. Stir the oil-based peppermint extract and spirulina/matcha powder into the melted white chocolate until it turns an even pale green.
  6. Dip each chilled protein ball into the mint coating using a fork, letting the excess drip off. Return to the parchment paper.
  7. Immediately sprinkle the wet coating with mini dark chocolate chips and chocolate shavings before it sets.
  8. Place the balls in the refrigerator for 10-15 minutes until the shell has fully hardened. Serve and enjoy!

Notes

Store in an airtight container in the refrigerator for up to 2 weeks, or freeze for up to 3 months. Ensure your mint extract for the coating is oil-based to prevent the chocolate from seizing.
