Ingredients
  

Mochi Waffle Batter
  • 2 cups Mochiko (sweet rice flour) Gluten-free
  • 0.5 cup granulated sugar
  • 2 tsp baking powder
  • 0.25 tsp kosher salt
  • 2 large eggs room temperature
  • 1.5 cups whole milk room temperature
  • 0.25 cup unsalted butter melted and slightly cooled
  • 1 tsp pure vanilla extract
Miso Caramel Sauce
  • 1 cup granulated sugar
  • 0.25 cup water
  • 0.5 cup heavy whipping cream room temperature
  • 4 tbsp unsalted butter cubed
  • 2 tbsp white miso paste shiro miso
  • 0.5 tsp vanilla extract

Equipment

Method
 

  1. In a large bowl, whisk together the mochiko flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk the eggs, milk, melted butter, and vanilla extract until completely combined.
  3. Pour the wet ingredients into the dry ingredients and whisk until smooth. Let the batter rest for 10-15 minutes.
  4. Preheat your waffle iron and lightly grease it. Cook 2-3 tablespoons of batter per bite for 4-5 minutes until golden and crispy.
  5. For the caramel: In a heavy saucepan, combine 1 cup sugar and 1/4 cup water. Stir gently off the heat to moisten.
  6. Place over medium-high heat and boil without stirring until it reaches a deep amber color (about 5-7 minutes).
  7. Remove from heat immediately. Carefully whisk in the heavy cream (it will bubble vigorously).
  8. Whisk in the cubed butter until melted, then aggressively whisk in the white miso paste and vanilla extract until completely smooth.
  9. Drizzle the warm miso caramel heavily over the fresh mochi waffle bites and serve immediately.

Notes

Store leftover waffles at room temperature in an airtight container for up to 2 days; reheat in a toaster to regain crispness. Do not refrigerate the waffles.
