Ingredients

The Foundation
  • 4 slices thick brioche or milk bread crusts removed, cut into precise squares
  • 2 Belgian waffles square, toasted, and cut into quarters
  • 1 box square or hexagonal crackers
The Architecture
  • 8 oz sharp cheddar cheese block cut into 1-inch perfect cubes
  • 6 oz sliced Provolone cut into sharp triangles
  • 4 oz smoked salmon cut into uniform ribbons and rolled into cylinders
  • 4 oz sliced salami folded into sharp triangular cones
  • 2 hard-boiled eggs sliced into perfect disks
Color Blocks & Accents
  • 0.5 cantaloupe cut into 1-inch perfect cubes
  • 1 pint fresh blackberries sorted for uniform size
  • 1 kiwi peeled and cut into uniform slices
  • 0.5 cup thick Greek yogurt
  • 0.25 cup dark berry jam
  • 2 sprigs fresh rosemary for geometric garnish

Equipment

  • Large dark serving board (slate or black wood)
  • Sharp Chef's Knife
  • Food-safe ruler
  • Mandoline Slicer
  • Geometric ramekins

Method

  1. Place your dark serving board on the final display table. Position the geometric ramekins (filled with yogurt and jam) off-center to create visual anchors.
  2. Using a ruler and a sharp knife, cut your cheese and melon into precise 1-inch cubes. Arrange them on the board in tightly packed, perfectly straight grids or checkerboard patterns.
  3. Cut the toast and waffles into exact squares or sharp triangles. Fan them out in a straight line or a sharp 90-degree angle, ensuring equal overlapping.
  4. Fold the round salami slices twice to form sharp triangles. Stand them up on their edges in a tightly packed, straight row.
  5. Roll the smoked salmon ribbons into uniform cylinders and arrange them vertically in a neat cluster.
  6. Fill the remaining negative space with strict, straight lines of uniform blackberries, crackers, and sliced eggs. Do not mix the elements; keep them heavily color-blocked.
  7. Use culinary tweezers to perfect all straight lines and angles. Place rosemary sprigs strictly parallel or perpendicular to the food rows. Serve immediately.

Notes

Precision is everything. Take your time slicing the ingredients before you begin assembly. Keep softer ingredients like melon away from dry ingredients like crackers to prevent sogginess.
