- Combine crushed Biscoff cookies and melted butter. Press firmly into the bottom of 6-8 serving glasses.
- In a large bowl, whip cold heavy cream until stiff peaks form. Set aside in the fridge.
- In another bowl, beat softened cream cheese until smooth. Add Biscoff spread, powdered sugar, and vanilla. Beat until combined.
- Gently fold the whipped cream into the cream cheese mixture in two additions until smooth and combined.
- Pipe or spoon the cheesecake mixture into the glasses over the crust base.
- Refrigerate for at least 3 hours to set.
- Before serving, top with whipped cream, drizzle with melted Biscoff spread, and garnish with a whole cookie.
Notes
Ensure cream cheese is at room temperature and heavy cream is very cold for the best texture. Chill for at least 3 hours before serving.
