No-Bake Christmas Jello Balls

Chewy, fudge-like red and green truffle balls made with Jello and condensed milk, rolled in snowy coconut. An easy, no-bake holiday treat.

Ingredients
  

Red Batch
  • 1 can (14oz) sweetened condensed milk
  • 1 tbsp unsalted butter
  • 1 pack (3oz) Strawberry or Cherry Jello
Green Batch
  • 1 can (14oz) sweetened condensed milk
  • 1 tbsp unsalted butter
  • 1 pack (3oz) Lime Jello
Coating
  • 2 cups desiccated coconut shredded, sweetened or unsweetened

Equipment

  • Non-stick saucepan
  • Silicone Spatula
  • Shallow Bowl

Method
 

  1. Make one color at a time. In a saucepan over medium-low heat, combine 1 can condensed milk, 1 tbsp butter, and 1 pack of Jello powder.
  2. Cook, stirring constantly, for 10-15 minutes until the mixture thickens significantly and pulls away from the bottom of the pan to form a dough-like mass.
  3. Pour mixture onto a buttered plate and let cool to room temperature, then refrigerate for at least 1 hour until firm.
  4. Grease hands with butter. Scoop small amounts of the mixture and roll into 1-inch balls.
  5. Roll each ball in the shredded coconut until fully coated.
  6. Repeat process for the second color batch. Store in an airtight container.

Notes

You must cook the mixture long enough or it will be too sticky to roll. If it sticks to your hands, chill it longer or grease hands more.
