Ingredients
  

Filling
  • 8 oz cream cheese softened to room temperature
  • 1.5 cups graham cracker crumbs finely crushed
  • 0.5 cup powdered sugar
  • 1 cup freeze-dried strawberries crushed into powder (or 1/3 cup strawberry jam)
  • 1 tsp vanilla extract
Coating
  • 12 oz pink candy melts or white chocolate with pink coloring
  • 1 tsp coconut oil for thinning chocolate
  • 2 tbsp white chocolate chips melted, for drizzle
  • 1 tbsp sprinkles pink and yellow nonpareils

Method
 

  1. Beat softened cream cheese, powdered sugar, and vanilla in a bowl until smooth.
  2. Stir in graham cracker crumbs and crushed freeze-dried strawberries until a dough forms.
  3. Roll mixture into 1-inch balls and place on a parchment-lined baking sheet. Freeze for 30 minutes.
  4. Melt pink candy melts with coconut oil in the microwave in 30-second intervals until smooth.
  5. Dip chilled balls into the melted chocolate, tapping off excess. Return to parchment paper.
  6. Drizzle with melted white chocolate and top with sprinkles immediately.
  7. Refrigerate for 15 minutes to set completely before serving.

Notes

Using freeze-dried strawberries prevents the filling from becoming too wet. If you use fresh fruit, consume within 2 days.
