Method
- Heat 1 tbsp butter and oil in a large pot over medium-high heat. Add mushrooms and sear until browned (5-7 mins). Remove mushrooms and set aside.
- Reduce heat to medium. Add remaining butter and onion. Sauté until soft and translucent.
- Add garlic, thyme, and uncooked rice. Stir constantly for 2 minutes to toast the rice.
- Pour in broth and soy sauce. Scrape the bottom of the pot to release browned bits. Bring to a boil.
- Reduce heat to low, cover, and simmer for 15-18 minutes until liquid is absorbed.
- Remove from heat. Let stand covered for 10 minutes.
- Fluff with a fork. Stir in the cooked mushrooms and parmesan cheese. Garnish with chives.
Notes
Don't salt the mushrooms until they are browned, or they will release water and steam instead of searing.
