Ingredients

Feta Rolls
  • 14-16 oz feta cheese 2 blocks, cut into logs
  • 10-12 sheets phyllo dough thawed
  • 0.5 cup olive oil extra virgin
  • 2 tbsp sesame seeds
Chili Honey Topping
  • 0.33 cup honey
  • 1-2 tsp chili flakes to taste
  • 2 tbsp fresh dill or mint chopped

Equipment

  • Baking sheet
  • Pastry brush
  • Small saucepan

Method

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the feta blocks into rectangular logs approximately 1 inch thick.
  3. Lay out one sheet of phyllo dough and brush lightly with olive oil. Place a second sheet on top and brush again.
  4. Cut the layered phyllo sheet in half or to size. Place a piece of feta at the bottom edge.
  5. Fold the sides of the phyllo over the cheese and roll it up tightly. Place seam-side down on the baking sheet.
  6. Repeat with remaining feta and phyllo.
  7. Brush the tops of all rolls generously with olive oil and sprinkle with sesame seeds.
  8. Bake for 18-22 minutes until deep golden brown and crispy.
  9. While baking, warm the honey and chili flakes in a small pot or microwave until runny.
  10. Drizzle the hot rolls with chili honey and garnish with fresh herbs immediately before serving.

Notes

Keep phyllo dough covered with a damp towel while working to prevent drying out.
