Ingredients
  

Feta Rolls
  • 8 oz feta cheese block style, crumbled
  • 2 tbsp cream cheese or ricotta
  • 1 package phyllo dough thawed
  • 1 egg beaten
  • 2 tbsp fresh dill chopped
  • 1 tbsp fresh mint chopped
  • 0.5 cup olive oil for brushing
Chili Honey Glaze
  • 0.5 cup honey
  • 1-2 tsp red chili flakes to taste
  • 1 tsp apple cider vinegar
  • 1 tbsp sesame seeds toasted, for garnish

Equipment

  • Baking sheet
  • Pastry brush
  • Small saucepan
  • Mixing bowl

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix crumbled feta, cream cheese, egg, chopped dill, mint, and black pepper until combined.
  3. Lay one sheet of phyllo flat and brush lightly with olive oil. Place a second sheet on top and brush again.
  4. Place 2 tablespoons of filling along the short edge. Fold in sides and roll tightly like a cigar.
  5. Place rolls seam-side down on the baking sheet. Brush tops generously with olive oil.
  6. Bake for 18-22 minutes until deep golden brown and crispy.
  7. While baking, warm honey in a small saucepan with chili flakes and vinegar. Do not boil.
  8. Plate the hot rolls, drizzle generously with warm chili honey, and sprinkle with sesame seeds.

Notes

Keep phyllo dough covered with a damp towel while working to prevent drying out.
