Oven Fried Feta Rolls with Chili Honey

Crispy, golden pastry rolls filled with warm, salty feta cheese and drenched in a sticky, sweet, and spicy chili honey glaze.

Ingredients
  

Feta Rolls
  • 1 block feta cheese (8 oz / 225g) packed in brine, patted dry
  • 8-10 sheets phyllo dough or spring roll wrappers thawed
  • 0.25 cup unsalted butter melted (or olive oil)
Chili Honey & Garnish
  • 0.5 cup pure honey
  • 1-2 tsp crushed red pepper flakes to taste
  • 1 tbsp toasted sesame seeds
  • 1 tbsp fresh mint leaves roughly chopped
  • 1 pinch flaky sea salt optional

Equipment

  • Parchment paper
  • Small saucepan
  • Pastry brush

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small saucepan, gently warm the honey and red pepper flakes over medium-low heat for 5-7 minutes. Remove from heat and let infuse.
  3. Remove the feta from its brine, pat completely dry with paper towels, and cut into 8 to 10 rectangular sticks (about 1/2 inch thick).
  4. If using phyllo, brush one sheet with melted butter, fold in half, and place a feta stick at the bottom. If using spring roll wrappers, just place the cheese at the bottom of one wrapper.
  5. Fold the bottom over the cheese, fold in the sides, and roll tightly to the top. Seal the edge with a little butter or water.
  6. Place the rolls seam-side down on the prepared baking sheet. Brush the tops generously with the remaining melted butter.
  7. Bake for 12 to 15 minutes until puffed, extremely crispy, and golden brown.
  8. Transfer immediately to a serving plate. Drizzle generously with the warm chili honey, and garnish with sesame seeds, fresh mint, and crumbled feta.

Notes

Keep phyllo dough covered with a damp towel while working to prevent it from drying out and cracking.
