Method
- Prepare pancake batter according to package directions. Cook about 8-10 pancakes; set aside.
- Heat 1 tbsp oil in a skillet over medium-high heat. Brown ground sausage, breaking it up. Drain excess grease.
- Stir brown sugar, 2 tbsp maple syrup, and black pepper into the sausage. Cook 2-3 minutes until well combined and gooey. Remove from heat.
- Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
- Layer half of the pancakes in the bottom of the baking dish.
- Spread half of the cooked sausage mixture over the pancakes, then sprinkle with half of the shredded cheese (if using).
- Repeat with another layer of pancakes, then the remaining sausage and cheese.
- Top with a final layer of pancakes.
- Bake, covered with foil, for 20 minutes (30 min if refrigerated). Remove foil and bake 5-10 minutes more until golden and bubbly.
- Rest 5 minutes. Serve slices drizzled with thick maple syrup, powdered sugar, and berries (optional).
Notes
Casserole can be assembled the night before and refrigerated. Use real maple syrup for the best flavor. Ensure sausage is thoroughly drained to prevent a greasy casserole.
