Method
- Finely chop the bittersweet chocolate to ensure even melting.
- In a medium saucepan over medium heat, whisk together milk, heavy cream, 2 tsp powdered sugar, and espresso powder. Heat until steaming (do not boil).
- Reduce heat to low. Add the chopped chocolate and salt. Let sit for 30 seconds.
- Whisk vigorously for 2-3 minutes until the chocolate is completely melted and the mixture is glossy and emulsified.
- Simmer on low for another 2 minutes to thicken. Stir in vanilla extract.
- In a separate bowl, whip the cold heavy cream with 1 tbsp powdered sugar until soft peaks form.
- Pour hot chocolate into cups, top with whipped cream, and dust with cocoa powder.
Notes
For an even thicker texture, allow the hot chocolate to cool slightly before serving.
