Ingredients
  

Bread Dough
  • 3 cups all-purpose flour (360g)
  • 1.5 tsp salt
  • 0.5 tsp instant yeast
  • 1.5 cups water cool to room temp (350g)
Flavor Add-ins
  • 1 head roasted garlic cloves squeezed and mashed
  • 0.5 cup parmesan cheese grated, plus extra for top
  • 1 tbsp fresh rosemary chopped

Equipment

  • Large mixing bowl
  • Dutch Oven (4-6 quart)
  • Parchment paper
  • Wire rack

Method
 

  1. In a large bowl, whisk together flour, salt, and yeast. Add mashed roasted garlic, parmesan, and rosemary, tossing to combine.
  2. Add water and mix with a spoon or hand until a shaggy, sticky dough forms. Cover bowl tightly with plastic wrap.
  3. Let dough rest at room temperature for 12-18 hours until bubbly and doubled in size.
  4. Turn dough out onto a floured surface. Gently fold edges to center to form a ball. Place seam-side down on parchment paper. Cover and let rest for 1 hour.
  5. While dough rests, place a covered Dutch oven in the oven and preheat to 450°F (230°C) for at least 30 minutes.
  6. Score the top of the dough if desired. Carefully place dough (on parchment) into the hot Dutch oven. Cover and bake for 30 minutes.
  7. Remove lid and bake for another 10-15 minutes until crust is deep golden brown. Cool on a wire rack before slicing.

Notes

Roast garlic head at 400°F for 30-40 mins beforehand.
