- In a large bowl, whisk together flour, salt, and yeast. Add mashed roasted garlic, parmesan, and rosemary, tossing to combine.
- Add water and mix with a spoon or hand until a shaggy, sticky dough forms. Cover bowl tightly with plastic wrap.
- Let dough rest at room temperature for 12-18 hours until bubbly and doubled in size.
- Turn dough out onto a floured surface. Gently fold edges to center to form a ball. Place seam-side down on parchment paper. Cover and let rest for 1 hour.
- While dough rests, place a covered Dutch oven in the oven and preheat to 450°F (230°C) for at least 30 minutes.
- Score the top of the dough if desired. Carefully place dough (on parchment) into the hot Dutch oven. Cover and bake for 30 minutes.
- Remove lid and bake for another 10-15 minutes until crust is deep golden brown. Cool on a wire rack before slicing.
Notes
Roast garlic head at 400°F for 30-40 mins beforehand.
