Peach & Basil Flatbread Pizza

Ingredients
  

Flatbread & Toppings
  • 2 pieces Pre-made flatbreads Naan, pita, or artisanal flatbread crusts
  • 1 tablespoon Extra virgin olive oil For brushing
  • 4 ounces Fresh mozzarella cheese Sliced or gently torn
  • 1 large Yellow peach Ripe but firm, pitted and sliced into wedges
  • 1/4 cup Fresh basil leaves Thinly sliced (chiffonade)
  • 1 tablespoon Balsamic glaze Optional, for drizzling

Equipment

  • Baking sheet or Pizza stone
  • Pastry brush
  • Chef's knife

Method
 

  1. Preheat your oven to 400°F (200°C). If using a pizza stone, place it in the oven to heat up.
  2. Place the flatbreads on a baking sheet. Using a pastry brush, lightly coat the top of each flatbread with extra virgin olive oil.
  3. Distribute the sliced or torn fresh mozzarella evenly over the flatbreads, leaving a small border for the crust.
  4. Arrange the fresh peach slices neatly over and around the cheese.
  5. Bake in the preheated oven for 8-12 minutes, or until the cheese is completely melted and bubbly, and the edges of the flatbread are golden brown and crisp.
  6. Remove from the oven and let cool for 1-2 minutes. Sprinkle the freshly sliced basil evenly over the top.
  7. Drizzle lightly with balsamic glaze (if using), slice into pieces, and serve immediately.

Notes

Pat your fresh mozzarella dry with a paper towel before placing it on the flatbread to prevent excess moisture from making the crust soggy.
