Peach Maple Bourbon Smash

  • 2 oz Bourbon Whiskey Mid-proof preferred
  • 1/2 medium Fresh Peach Pitted and cut into chunks
  • 1/2 oz Pure Maple Syrup Adjust to taste
  • 1/2 oz Fresh Lemon Juice Freshly squeezed
  • 2 sprigs Fresh Thyme Plus more for garnish
  • 1 slice Peach Grilled or charred, for garnish
  • 1 cup Ice For shaking and serving

  • Muddler
  • Hawthorne Strainer
  • Fine-mesh strainer

Method
 

  1. Prepare the garnish: Heat a grill pan over medium-high heat. Lightly grill a thick slice of peach for 1-2 minutes per side until charred. Set aside to cool.
  2. In the bottom of a cocktail shaker, combine the fresh peach chunks, thyme sprigs, lemon juice, and maple syrup.
  3. Using a muddler, firmly press and twist to extract the juices from the peach and the essential oils from the thyme until a pulpy consistency forms.
  4. Add the bourbon to the shaker and fill halfway with ice.
  5. Seal the shaker and shake vigorously for 15-20 seconds to chill and dilute the cocktail.
  6. Place a large fresh ice cube in a rocks glass. Double strain the cocktail through a Hawthorne strainer and a fine mesh strainer into the glass to remove all pulp and herb fragments.
  7. Garnish with the grilled peach slice on a cocktail pick and a fresh sprig of thyme. Serve immediately.

Notes

To make a batch: Muddle a large quantity of peaches, lemon, maple, and thyme in a pitcher. Stir in bourbon. Chill and serve over fresh ice as needed.
