- Prepare the garnish: Heat a grill pan over medium-high heat. Lightly grill a thick slice of peach for 1-2 minutes per side until charred. Set aside to cool.
- In the bottom of a cocktail shaker, combine the fresh peach chunks, thyme sprigs, lemon juice, and maple syrup.
- Using a muddler, firmly press and twist to extract the juices from the peach and the essential oils from the thyme until a pulpy consistency forms.
- Add the bourbon to the shaker and fill halfway with ice.
- Seal the shaker and shake vigorously for 15-20 seconds to chill and dilute the cocktail.
- Place a large fresh ice cube in a rocks glass. Double strain the cocktail through a Hawthorne strainer and a fine mesh strainer into the glass to remove all pulp and herb fragments.
- Garnish with the grilled peach slice on a cocktail pick and a fresh sprig of thyme. Serve immediately.
Notes
To make a batch: Muddle a large quantity of peaches, lemon, maple, and thyme in a pitcher. Stir in bourbon. Chill and serve over fresh ice as needed.
