Ingredients
  

  • 0.5 cup old-fashioned rolled oats
  • 1 tbsp chia seeds
  • 0.5 cup milk dairy or plant-based
  • 0.25 cup mashed ripe banana (about half a medium banana)
  • 2 tbsp creamy peanut butter + extra for topping
  • 1 tsp maple syrup or honey optional, adjust to taste
  • 0.25 tsp vanilla extract
For Topping (Optional)
  • Banana slices
  • Extra chia seeds

Equipment

  • Mason jar or airtight container

Method
 

  1. In a mason jar, combine milk, mashed banana, 2 tbsp peanut butter, maple syrup (if using), and vanilla. Stir well.
  2. Add the rolled oats and chia seeds to the jar.
  3. Stir everything together thoroughly for about 30 seconds, ensuring all ingredients are submerged.
  4. Cover the jar with a lid and refrigerate for a minimum of 6 hours, ideally overnight.
  5. In the morning, add a splash of milk if the mixture is too thick. Top with a spoonful of fresh peanut butter, banana slices, and extra chia seeds. Serve cold.

Notes

To make this vegan, ensure you use a plant-based milk and maple syrup. The mixture will become thick and gelatinous after chilling.
