Pear, Brie & Cranberry Flatbread

Ingredients
  

Base
  • 1 sheet puff pastry thawed
  • 1 tbsp olive oil for brushing
Toppings
  • 8 oz Brie cheese sliced thinly
  • 2 pears Bartlett or Anjou, thinly sliced
  • 0.5 cup cranberry sauce whole berry
  • 1 tbsp fresh thyme leaves stripped
  • 2 tbsp honey for drizzling
  • 1 pinch sea salt flaky

Equipment

  • Baking sheet
  • Parchment paper
  • Pizza cutter
  • Pastry brush

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out puff pastry gently and cut into a 10-12 inch circle (or keep rectangular). Transfer to baking sheet.
  3. Score a 1-inch border around the edge with a knife (do not cut through) and prick the center area with a fork. Brush with olive oil.
  4. Arrange Brie slices in a single layer inside the border.
  5. Layer pear slices over the cheese. Sprinkle with a pinch of salt.
  6. Bake for 15-20 minutes until the crust is puffed and golden, and cheese is bubbly.
  7. Remove from oven. Immediately top with dollops of cranberry sauce.
  8. Drizzle with honey and garnish with fresh thyme.
  9. Cool for 5 minutes before slicing into wedges.

Notes

For extra crunch, sprinkle chopped walnuts on top before baking.
