Pepperoni Pizzadillas

A crispy, cheesy mashup of a quesadilla and a pepperoni pizza. Ready in 15 minutes and perfect for quick lunches.

Ingredients
  

Main Ingredients
  • 2 flour tortillas large burrito size
  • 1.5 cups mozzarella cheese shredded
  • 0.5 cup pizza sauce thick
  • 20 slices pepperoni
  • 1 tbsp butter softened
  • 0.5 tsp garlic powder optional
  • 0.5 tsp Italian seasoning

Equipment

  • Large skillet
  • Pizza cutter
  • Spatula

Method
 

  1. Heat a large skillet over medium heat.
  2. Butter one side of each tortilla. Sprinkle garlic powder over the butter if desired.
  3. Place one tortilla, butter side down, in the skillet.
  4. Sprinkle half the cheese on the tortilla. Drizzle pizza sauce over the cheese (don't soak the tortilla).
  5. Arrange pepperoni slices on top and sprinkle with Italian seasoning.
  6. Top with the remaining cheese and fold the tortilla in half (moon shape).
  7. Cook for 3-4 minutes until the bottom is golden brown and crispy.
  8. Flip carefully and cook for another 3 minutes until the second side is golden and cheese is melted.
  9. Remove from pan, let rest for 1 minute, and slice into wedges.

Notes

Don't put sauce directly on the tortilla to prevent sogginess. Always sandwich sauce between cheese layers.
