Ingredients
  

Chicken
  • 1.5 lbs chicken tenderloins pat dry
Marinade/Sauce
  • 0.5 cup extra virgin olive oil
  • 0.25 cup lemon juice freshly squeezed
  • 1 tbsp lemon zest
  • 4 cloves garlic minced
  • 1 tsp dried oregano
  • 0.5 tsp paprika
  • 0.25 cup chicken broth
  • 1 tsp salt to taste
Garnish
  • 2 tbsp fresh parsley chopped

Method
 

  1. Preheat oven to 400°F (200°C). Lightly grease a 9x13 baking dish.
  2. In a bowl, whisk together olive oil, lemon juice, zest, garlic, oregano, paprika, broth, salt, and pepper.
  3. Place chicken tenders in a bowl or bag. Pour 2/3 of the marinade over them and toss to coat. Let sit for 15-30 minutes.
  4. Arrange chicken in the baking dish in a single layer. Pour the remaining marinade and any liquid from the bag over the chicken.
  5. Bake for 15-20 minutes, or until chicken reaches 165°F (74°C).
  6. Turn oven to Broil. Broil chicken for 2-3 minutes until golden brown on top.
  7. Garnish with fresh parsley and serve with pan juices.

Notes

Don't skip the broiler step; it adds flavor and color to the tenders.
