Ingredients

Filling
  • 1 lb Ground beef (80/20 preferred) can substitute with shaved steak
  • 1 large Yellow or white onion sliced into strips
  • 1 large Green bell pepper sliced into strips
  • 8 oz Fresh mushrooms cremini or button, sliced
  • 2 cloves Garlic finely minced
  • 1 tablespoon Olive oil or butter
  • 2 tablespoons Worcestershire sauce
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black pepper freshly ground
Sliders and Glaze
  • 1 pkg King's Hawaiian Dinner Rolls (12 count) or other low-carb rolls
  • 4 slices Provolone cheese or shredded white cheese
  • 4 tablespoons Unsalted butter melted
  • 1 teaspoon Garlic powder
  • 1 teaspoon Italian seasoning or dried oregano

Equipment

  • Large skillet
  • Serrated knife
  • 9x13 Baking Dish

Method

  1. Preheat oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.
  2. Slice the entire slab of dinner rolls in half horizontally and place the bottom half into the prepared baking dish.
  3. In a large skillet, heat olive oil over medium-high heat. Add sliced onions and bell peppers and sauté until caramelized, about 7-10 minutes. Push to the side, add mushrooms, cook until brown, then combine all veggies. Remove veggies from skillet and set aside.
  4. In the same skillet, brown the ground beef, breaking it apart, until cooked through. Drain excess grease. Reduce heat to medium.
  5. Stir minced garlic, Worcestershire sauce, salt, and black pepper into the beef. Cook for 1 minute.
  6. Return the caramelized vegetables to the skillet with the beef and stir until heated through. Taste and adjust seasoning.
  7. Layer the beef mixture evenly over the bottom rolls in the baking dish. Top the meat mixture with slices of Provolone cheese, covering it entirely. Place the top of the rolls on top.
  8. In a small bowl, melt the butter and whisk in garlic powder and Italian seasoning. Brush this mixture generously over the tops of the rolls.
  9. Bake for 15-20 minutes, until the cheese is melted and bubbly and the tops of the rolls are toasted and golden.
  10. Remove from oven, cut between individual sliders, and serve immediately hot.

Notes

Using a serrated knife is key for clean horizontal cuts through the rolls. If the tops brown too quickly before the cheese is melted, tent the dish with foil. For a low-carb option, skip the rolls and serve as a skillet meal.
