Pineapple Cowboy Candy Chicken Wings

Ingredients
  

The Wings
  • 4 lbs chicken wings separated into drums and flats
  • 2 tbsp baking powder aluminum-free
  • 1 tsp kosher salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp black pepper
Pineapple Cowboy Candy Glaze
  • 0.5 cup cowboy candy candied jalapeños, chopped
  • 0.33 cup cowboy candy syrup liquid from jar
  • 0.5 cup pineapple juice
  • 4 tbsp unsalted butter
  • 2 tbsp brown sugar
  • 1 tbsp soy sauce
  • 2 cloves garlic minced

Equipment

  • Large baking sheet
  • Wire rack
  • Large mixing bowl
  • Saucepan

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top. Spray rack with oil.
  2. Pat chicken wings completely dry with paper towels.
  3. In a small bowl, mix baking powder, salt, garlic powder, onion powder, paprika, and pepper.
  4. Toss wings in the dry mixture until evenly coated. Arrange in a single layer on the wire rack.
  5. Bake for 45-50 minutes, turning halfway, until skin is golden and crispy.
  6. While wings bake, melt butter in a saucepan over medium heat. Add minced garlic and cook 30 seconds.
  7. Add pineapple juice, cowboy candy syrup, brown sugar, and soy sauce. Simmer 5-8 minutes until slightly thickened.
  8. Stir in chopped candied jalapeños and remove from heat.
  9. Toss hot wings in the glaze immediately before serving.

Notes

For extra sticky wings, return the glazed wings to the oven for 2 minutes to set the sauce.
