Ingredients
  

The Bread & Butter
  • 4 slices sourdough bread thick cut
  • 3 tbsp butter softened
  • 0.5 tsp garlic powder
  • 0.5 tsp Italian seasoning
The Filling
  • 1.5 cups mozzarella cheese shredded, low moisture
  • 16 slices pepperoni
  • 0.25 cup pizza sauce plus more for dipping
  • 1 tbsp parmesan cheese optional

Equipment

  • Skillet or griddle
  • Spatula
  • Small bowl
  • Knife

Method
 

  1. In a small bowl, mix softened butter with garlic powder and Italian seasoning.
  2. Spread the garlic butter on one side of each slice of bread.
  3. On the unbuttered side of two slices, layer mozzarella cheese, pepperoni, a spoonful of sauce, and more cheese.
  4. Top with the remaining bread slices, butter side facing out.
  5. Heat a skillet over medium-low heat. Cook sandwiches for 3-4 minutes until golden brown.
  6. Flip and cook for another 3-4 minutes until cheese is fully melted. Use a lid if needed to help melt cheese.
  7. Serve warm with extra marinara sauce for dipping.

Notes

Layer the cheese on the bread first, then the sauce, then more cheese to prevent the bread from getting soggy.
