- Preheat oven to 325°F (165°C). Pat ribs dry, season with S&P, and dust with flour.
- Sear Ribs: Heat oil in a large Dutch oven. Sear ribs in batches on all sides until deep brown. Remove and set aside.
- Sauté Aromatics: Sauté onion, carrots, and celery in the same pot (8-10 min). Add garlic and tomato paste, cook 2 min.
- Deglaze & Simmer: Pour in red wine, scraping the bottom. Reduce by half. Stir in broth, pomegranate juice, and pomegranate molasses. Bring to a simmer.
- Braise: Return ribs to the pot with fresh herbs. Cover and transfer to oven. Braise for 3-3.5 hours, until fall-off-the-bone tender.
- Make Glaze: Remove ribs to a platter. Strain braising liquid into a clean saucepan, discarding solids.
- Reduce Glaze: Boil the strained liquid for 15-20 minutes, or until it reduces to a thick, gooey, viscous glaze that coats a spoon.
- Serve: Pour the heavy, glossy glaze over the warm ribs. Garnish with pomegranate arils and fresh herbs. Serve immediately.
Notes
Do not skip searing the meat; it is crucial for flavor. Reducing the strained braising liquid is essential to create the thick, heavy, viscous glaze. This dish is excellent served over creamy polenta or mashed potatoes.
