Ingredients
  

For the Mozzarella Bites
  • 1 container fresh mozzarella balls 8 oz bocconcini, drained well
  • 4 oz thinly sliced prosciutto about 12-16 slices, halved lengthwise
For the Herb Dressing/Glaze
  • 0.25 cup extra virgin olive oil good quality
  • 1 tbsp balsamic glaze or thick balsamic reduction
  • 1 tsp dried Italian seasoning or mixed dried herbs
  • 0.5 tsp black pepper
  • pinch sea salt taste first, prosciutto is salty
For Garnish
  • small sprigs fresh rosemary or thyme
  • optional wooden toothpicks or cocktail skewers for serving

Method
 

  1. Drain mozzarella balls thoroughly. Halve the prosciutto slices lengthwise.
  2. Wrap one half-slice of prosciutto around each mozzarella ball. Secure with a toothpick if desired. Arrange on a serving platter.
  3. Whisk together olive oil, balsamic glaze (thick, gooey, viscous consistency), Italian seasoning, and pepper in a small bowl.
  4. Spoon the heavy viscous dressing generously over the wrapped mozzarella bites, ensuring it coats them completely and pools slightly on the platter.
  5. Garnish with fresh herb sprigs. Serve immediately or chill briefly before serving.

Notes

Use a balsamic glaze for the essential thick, viscous consistency. Ensure mozzarella is well-drained to avoid a watery presentation. Quality of olive oil makes a difference.
