- Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- Boil pasta shells in salted water until al dente. Drain and rinse with cool water.
- In a bowl, mix ricotta, pumpkin puree, 1 cup Gouda, 1/2 cup Parmesan, egg, garlic powder, nutmeg, salt, and pepper.
- Melt butter in a skillet over medium heat. Add sage leaves. Cook until butter turns golden brown and nutty. Remove sage leaves.
- Add minced garlic to brown butter, cook 30 seconds. Whisk in heavy cream and simmer 3-4 minutes to thicken.
- Stir in 1 cup Parmesan cheese until melted. Season sauce with salt and pepper.
- Pour 1/2 cup sauce into the baking dish. Stuff each shell with pumpkin mixture and arrange in dish.
- Top shells with remaining sauce, remaining Gouda, and mozzarella.
- Cover with foil and bake 20 minutes. Uncover and bake 10-15 more minutes until bubbly.
- Garnish with fried sage leaves before serving.
Notes
Use freshly grated cheese for the best melt.
