Ingredients

Brie
  • 1 sheet frozen puff pastry thawed
  • 1 wheel of Brie or Camembert cheese 8 to 10 oz
  • 1 large egg whisked with 1 Tbsp water for egg wash
Garnish
  • 1 cinnamon stick or pretzel stick for the stem
  • 1 small fresh sage leaf
  • 0.25 cup fig jam or cranberry sauce optional filling

Equipment

  • Baking sheet
  • Parchment paper
  • Kitchen twine

Method

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry slightly and cut into a rough circle large enough to enclose the Brie wheel (about 12 inches).
  3. Spread optional fig jam or cranberry sauce thinly over the top of the Brie wheel. Center the Brie on the pastry.
  4. Bring the pastry edges up and over the cheese, pinching them together firmly to seal the cheese completely. Trim any excess pastry.
  5. Using kitchen twine, gently wrap the pastry-covered cheese, creating 8-10 even sections/ridges that resemble a pumpkin. Tie the twine firmly at the top.
  6. Brush the entire surface of the pastry with the prepared egg wash.
  7. Bake for 20-25 minutes, or until the pastry is golden-brown. Remove from oven and immediately cut and remove the twine.
  8. While still hot, insert the cinnamon stick into the center as the stem and garnish with the sage leaf. Transfer to your serving board and serve immediately with accompaniments.

Notes

Serve with fresh sliced apples, pears, baguette slices, and candied nuts. For a savory version, substitute the jam with a sprig of fresh thyme or rosemary before wrapping.
