Ingredients
  

Bagel Base
  • 4 large bagels Plain, Everything, or Sesame
Filling
  • 4 large eggs
  • 0.25 cup heavy cream or milk
  • 4 slices bacon cooked and chopped
  • 0.5 cup cheddar cheese shredded
  • 2 tbsp green onions sliced
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp garlic powder

Method
 

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Using a serrated knife or your fingers, hollow out the center of each bagel to create a wide bowl, being careful not to tear the bottom.
  3. In a mixing bowl, whisk together eggs, cream, salt, pepper, and garlic powder until smooth.
  4. Place bagels on the baking sheet. Distribute half the cheese, the chopped bacon, and green onions into the bagel cavities.
  5. Pour the egg mixture carefully into each bagel, filling almost to the top.
  6. Top with the remaining cheese.
  7. Bake for 20-25 minutes until the egg filling is set and puffy, and the bagels are golden brown.
  8. Let cool for 5 minutes before serving to allow the filling to set.

Notes

If using fresh bagels, toast them lightly for 3 minutes before filling to prevent sogginess.
