Ingredients
  

Wet Ingredients
  • 1 cup mashed sweet potato cooked and cooled
  • 0.25 cup unsweetened applesauce
  • 1 tbsp coconut oil melted
  • 0.5 tsp vanilla extract alcohol-free preferred
Dry Ingredients
  • 1.5 cups quick oats use certified gluten-free if necessary
  • 0.5 tsp ground cinnamon

  • Medium mixing bowl
  • Spatula
  • Wire cooling rack

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the mashed sweet potato, applesauce, melted coconut oil, and vanilla extract until smooth.
  3. Sprinkle the quick oats and cinnamon over the wet mixture.
  4. Fold gently until all the oats are coated and a thick dough forms. Let rest for 5 minutes.
  5. Scoop 1-2 tablespoons of dough, roll into balls, place on the baking sheet, and flatten slightly with a spoon.
  6. Bake for 12-15 minutes until the edges are set but the centers remain soft.
  7. Cool completely on the pan or a wire rack before serving to a baby.

Notes

Store in the refrigerator for up to 4 days, or freeze in an airtight container for up to 3 months. To make softer for younger babies, pulse oats in a blender to form a coarse flour before mixing.
