Ingredients

For the Quick Salted Caramel Sauce
  • 0.5 cup brown sugar packed, or alternative sweetener
  • 0.25 cup unsalted butter or plant-based butter
  • 0.25 cup heavy cream or coconut cream
  • 1 tsp vanilla extract
  • 0.5 tsp sea salt or to taste
For the Yogurt Bowl (1 Serving)
  • 1 cup Greek yogurt plain or vanilla, high-protein
  • 1 banana medium, sliced
  • 0.25 cup granola low-sugar variety

Equipment

  • Heavy-bottom saucepan
  • Serving bowl

Method

  1. Make the Caramel: In a saucepan over medium heat, melt the butter. Stir in the brown sugar (or substitute) and cook for 3-5 minutes, stirring constantly, until the sugar dissolves and the mixture is amber.
  2. Finish the Caramel: Remove the pan from heat. Carefully and slowly pour in the heavy cream (it will bubble). Stir until smooth. Mix in the vanilla extract and sea salt. Let the caramel cool for 10-15 minutes to thicken.
  3. Assemble the Bowl: Scoop the Greek yogurt into a bowl. Arrange the banana slices and sprinkle the granola over the yogurt.
  4. Drizzle and Serve: Drizzle the thickened, gooey salted caramel sauce generously over the bowl. (If pre-made, microwave caramel for 10-20 seconds to warm and thin slightly.) Serve immediately.

Notes

The caramel sauce can be made ahead of time and stored in the refrigerator for up to 2 weeks. Warm slightly before serving for best results. Adjust the amount of sea salt in the caramel to your preference for the perfect sweet-salty balance.
