Ingredients
  

Sugar Cookie Crust
  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 1.5 cups all-purpose flour
  • 0.5 tsp baking powder
  • 0.5 tsp salt
Cream Cheese Frosting
  • 8 oz cream cheese softened
  • 0.25 cup unsalted butter softened
  • 2 cups powdered sugar sifted
  • 1 tsp vanilla extract
Fruit Topping
  • 1 cup strawberries sliced (Red)
  • 1 cup mandarin oranges drained (Orange)
  • 1 cup pineapple cubed (Yellow)
  • 2 kiwis peeled and sliced (Green)
  • 0.5 cup blueberries (Blue)

Equipment

  • 12-inch Pizza Pan
  • Electric mixer
  • Offset spatula

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 12-inch round pizza pan.
  2. Cream 1/2 cup butter and granulated sugar until fluffy. Beat in egg and 1 tsp vanilla.
  3. Mix in flour, baking powder, and salt until dough forms. Press evenly onto pizza pan.
  4. Bake 12-15 minutes or until golden brown. Cool completely on a wire rack.
  5. Beat cream cheese and 1/4 cup butter until smooth. Add powdered sugar and remaining vanilla; beat until fluffy.
  6. Spread frosting over cooled crust. Arrange fruit in concentric circles to form a rainbow.
  7. Refrigerate for 30 minutes before cutting into wedges.

Notes

Ensure fruit is thoroughly dried with paper towels before placing on the pizza to prevent the frosting from getting watery.
