Raspberry Champagne Bellini

A festive and elegant sparkling cocktail made with homemade fresh raspberry purée and chilled Champagne or Prosecco.

Ingredients
  

Raspberry Purée
  • 6 oz raspberries fresh or frozen
  • 2 tbsp sugar granulated
  • 1 tbsp water
  • 1 tsp lemon juice
Cocktail Base
  • 1 bottle Champagne or Prosecco, chilled
  • 12 fresh raspberries for garnish

Equipment

  • Small saucepan
  • Fine-mesh sieve
  • Champagne Flutes

Method
 

  1. Combine raspberries, sugar, and water in a small saucepan over medium heat.
  2. Simmer for 5-7 minutes, mashing berries until broken down and saucy. Stir in lemon juice.
  3. Press mixture through a fine mesh sieve to remove seeds. Let the puree cool completely in the fridge.
  4. Add 1-2 tablespoons of chilled puree to the bottom of each champagne flute.
  5. Slowly pour Champagne over the puree. Stir gently to mix.
  6. Top with fresh raspberries and serve immediately.

Notes

Chill your glasses beforehand for the best results. Use sparkling cider for a non-alcoholic version.
