Method
- Place serving glasses in the freezer for 10 minutes to chill.
- In a blender, combine frozen raspberries, sweetener, and 1 tbsp liquid. Pulse until smooth and thick. Transfer to a small bowl.
- Rinse blender lightly. Add pineapple chunks, pineapple juice, cream of coconut, lime juice, and ice (plus rum if using). Blend on high until creamy.
- Spoon a layer of raspberry puree into the bottom of the chilled glasses.
- Pour the white colada mixture over the raspberry layer until half full.
- Add another dollop of raspberry puree and gently swirl with a spoon or straw to create a marbled effect.
- Top with remaining colada mixture.
- Garnish with fresh raspberries and a pineapple wedge. Serve immediately.
Notes
Use full-fat canned coconut milk for a less sweet, lighter version.
