Raspberry Colada Twist (Lava Flow)

Ingredients
  

Raspberry 'Lava' Layer
  • 1 cup frozen raspberries
  • 2 oz light rum or pineapple juice for non-alcoholic
  • 1 oz fresh lime juice
  • 1 oz simple syrup or to taste
Colada Layer
  • 3 oz cream of coconut e.g., Coco Lopez, must be the sweet, syrupy kind
  • 3 oz pineapple juice
  • 2 oz light rum or more pineapple juice for non-alcoholic
  • 1 cup frozen pineapple chunks
  • 0.5 cup ice
Garnish
  • Fresh raspberries
  • Pineapple wedges

  • Hurricane or Tulip glasses

Method
 

  1. Prepare garnishes (pineapple wedges, fresh raspberries) and set out two tall glasses.
  2. In a blender, combine all Raspberry 'Lava' Layer ingredients: frozen raspberries, 2 oz rum, lime juice, and simple syrup. Blend until smooth and thick.
  3. Divide the raspberry mixture evenly between the two glasses.
  4. Quickly rinse the blender pitcher clean.
  5. In the clean blender, combine all 'Colada' Layer ingredients: cream of coconut, pineapple juice, 2 oz rum, frozen pineapple, and ice. Blend until perfectly smooth and slushy.
  6. Take a spoon and hold it upside-down inside one of the glasses, just above the raspberry layer.
  7. Slowly pour the white colada mixture over the back of the spoon. This allows it to float on top of the raspberry layer, creating the 'lava flow' effect.
  8. Repeat for the second glass. Garnish with fresh raspberries and a pineapple wedge. Serve immediately.

Notes

The secret to perfect layers is to pour the white colada mixture very slowly over the back of a spoon. Ensure both layers are very thick and slushy. Use Cream of Coconut (like Coco Lopez), not coconut milk.
